Celebrate Okinawan Food
We are extremely lucky to have so many Okinawan dishes regularly available for us to eat. Not just for a special week but ALL YEAR. Okinawan dishes were not on regular menus but added on by request. The owners thought Okinawan food would not sell. If we don’t regularly order these dishes, then it will prove it’s not worth it to keep on menus. We need to prove that wrong!

Nabera (squash) Chanpuru: This is the dish that chef Roy Yamaguchi recommended as a must eat. Utage is the only place in Hawaii you can get Nabera Chanpuru. IIt’s more soup than stir-fry and comes in a light miso sauce that enhances the flavors of the ingredients and is refreshing to eat.
Goya Chanpuru: Utage’s chanpuru is “wetter” than other Okinawan restaurants because Jocelyn simmers the ingredients instead of frying with oil. They are going for lighter fare and providing healthier options. The flavors work well, the goya (bitter melon) is not too bitter and there’s lots of goya and rafute.
Ashitibichi or Pig’s Feet Soup: Most diners are awed by the huge portion of hock in Utage’s ashitibichi. They barely notice the seaweed, mustard cabbage and daikon that accompany it. The plethora of meat and gelatin you find in the delicious pork broth is a delight.
Rafute: Utage’s shoyu pork is a little on the sweeter side. It’s kid-friendly, made with no sake or awamori (a distilled Okinawan liquor). The pork belly is very tender with good flavor and the portion size is really generous!

Aunty Kiyo’s Yakisoba: Sunrise’s fried noodle dish uses Sun Noodle Okinawa Soba, Spam, cabbage, mushrooms, bean sprouts, and lots of red ginger. Okinawa Soba is thicker and chewier than Japanese yakisoba noodles. Tip: Buy a bottle of Chili Pepper Aloha Awamori (via Pagoda) to add an extra kick! Sunrise is the only local place you can get Okinawan yakisoba.
Ashitibichi (Pig’s Feet Soup): This soup comes with generous portions of pig hock, mustard cabbage, daikon and konbu. The base of the broth is katsuo dashi. Really nice flavor combinations.
Goya Champuru: Okinawans love bittermelon (cos healthy). They put it in ice cream, juice, cheese, chocolate and of course the famous champuru or stir fry. Sunrise’s Goya Champuru is not overly bitter. Chokatsu says there’s no cooking trick involved, he just knows which goya to buy. This version has goya, pork, tofu and egg. You can switch to Spam or tuna..
Okinawan Miso Soup: This is not your ordinary miso soup. The broth has a shrimp base and there is sometimes even a shrimp head sticking out of soup which has Chinese cabbage, Spam, tofu, egg, mustard cabbage and daikon! Great with Aloha Awamori’s Chili Pepper Awamori!

Okinawan Taco Rice Bowl: Taco rice is a fusion between Tex-Mex and Japanese flavors. Think of it as the ingredients of a taco placed on top of white rice. At Naru, the dish has a Korean twist: It’s served in a sizzling hot stone bowl like bi bim bap. Rice, seasoned ground beef, shredded cheese, lettuce, salsa and a raw egg yolk are layered in. You can hear the rice sizzling against the hot stone as it is brought to the table, where the server mixes everything together for you.
Okinawa Soba: Naru makes their Okinawa soba noodles in-house and cuts the noodles daily! They are not wavy or yellow like the Sun noodles that the other Hawaii Okinawan restaurants use. You can taste the freshness in Naru’s noodles, meltingly soft and chewy. The broth, made from pork and fish, is light and flavorful. There are three options for toppings: Soki (sparerib), Kakuni (pork belly) and Tofu.
Rafute: Naru uses a pressure cooker for this pork belly cooked with shoyu, mirin, awamori and kokuto (brown sugar). The flavor is not overly sweet, which is really nice.
Goya Chanpuru: Large pieces of tofu, Spam and goya bittermelon are sautéed, with salt and sake added to mitigate the bitterness and dashi added for seasoning. Eggs go into the dashi, so they end up fluffy.
The goya is cut super thin, which makes it akin to a “gateway goya” — not too bitter and a great way to bring people over to the “bittermelon side.”
Jimami Dofu: Naru makes this Okinawan peanut tofu in-house! They serve it with a shoyu, sake and mirin sauce with a garnish of sesame seeds. The texture is very smooth and gooey, with a delicious peanut flavor. Naru is the only place here that offers jimami tofu, except for doing a special order at Aloha Tofu Factory.
