History

Chef Owner Ryne Shimabukuro’s family roots are Yomitan, Okinawa.

Ryne trained in Kagawa, Japan in the art of udon making. Kagawa is known for sanuki udon, which is very popular with a toothsome texture. All of Ryne’s noodles are made from scratch. They are cut and rolled out before cooking. So you get a performance while you wait! Flour is sourced from Sun Noodle, Fishcake from Okuhara Foods, and Aburage from Aloha Tofu. Ryne rotates every week between an udon dish and Chinese hand pulled Biang Biang noodles. There are around 20 seats at Fishcake and it takes time for Ryne to make everything to order.

HERE’S WHAT YOU NEED TO KNOW ABOUT ORDERING

Shima-ya pops up every Saturday at Fishcake Hawaii in Kakaako. You need to check his IG account to see what dish will be offered. Ryne posts the menu every Thursday. You can reserve udon noodles but not Chinese noodles. Time slots are 11:15 am to 12:15 pm, 12:15 pm to 1:15 pm, 1:15 pm to 2:15 pm. Reservations are only accepted from Thursday and via IG direct messages. You can dine-in or take out.

Payment options: Cash or Venmo (cash preferred).
